If you\u2019ve ever taken a Bogot\u00e1 food tour, you know every ingredient carries an ancient story.
What would become of this corn before becoming an arepa?
Maybe it was lost in a field of thousands of cobs that, like him, had no clear future.
It was caught between becoming food for the birds that arrived furtively every morning when the farmer looked away\u2026
or fulfilling the dream of becoming a Colombian arepa.
Baked or grilled, it didn\u2019t matter.
What mattered was leaving the village and reaching the table of a restaurant in Bogot\u00e1.
There, it would be an honor to be boiled to soften, then shelled and ground, until forming that warm, perfect dough that smells like home.
An ancestral arepa, born long before the days of Gran Colombia.
The same one served on tables every morning, the one that has watched all Colombians change.
An immortal and eternal dough that, from those ancient times until today, has connected generation after generation with the sacred land.
During any Bogot\u00e1 food tour, the arepa is not just food\u2014it is living memory.
