What happened to Mar\u00eda?<\/p>\n\n\n\n
Her friends wondered. Her family too. Even the neighbor at the supermarket.<\/p>\n\n\n\n
\u201cShe\u2019s never been this off the grid,\u201d the neighbor said.<\/p>\n\n\n\n
\u201cWhenever she travels, she\u2019s always posting. She never lets go of Instagram.\u201d<\/p>\n\n\n\n
\u201cMaybe she\u2019s afraid to take out her phone or something\u2026\u201d<\/p>\n\n\n\n
Her mother, a very respectful Italian lady, replied with a calm smile:<\/p>\n\n\n\n
\u201cMar\u00eda is so amazed by Colombia, she hasn\u2019t had time for anything else.<\/p>\n\n\n\n
She only checks in with us\u2026 and that\u2019s it.<\/p>\n\n\n\n
She\u2019s never enjoyed a trip this much.\u201d<\/p>\n\n\n\n
Mar\u00eda walked through the aged streets of La Candelaria, exhausted but with her heart ablaze.<\/p>\n\n\n\n
She was thinking about lunch. What should she try?<\/p>\n\n\n\n
She\u2019d heard so much about Colombian food\u2026<\/p>\n\n\n\n
She thought a few days in Bogot\u00e1 wouldn\u2019t be enough to truly taste the country.<\/p>\n\n\n\n
But after that walking tour, something had shifted.<\/p>\n\n\n\n
The city wrapped her in its vibrant energy\u2014<\/p>\n\n\n\n
that colombianidad her traveler friends had promised.<\/p>\n\n\n\n
One week wasn\u2019t much,<\/p>\n\n\n\n
but it was enough to connect.<\/p>\n\n\n\n
Sometimes, choosing what to eat in a new country could be stressful.<\/p>\n\n\n\n
In other trips, finding something local and good had been a challenge.<\/p>\n\n\n\n
But here, in the historic center of the capital\u2014a melting pot of national cuisine\u2014<\/p>\n\n\n\n
the options felt endless, authentic, alive.<\/p>\n\n\n\n
As she turned the corner by a colonial house\u2014the Botero Museum\u2014<\/p>\n\n\n\n
the scent of wood smoke stopped her.<\/p>\n\n\n\n
Just like the guide had said:<\/p>\n\n\n\n
there it was\u2014the Colombian plains, served over charcoal.<\/p>\n\n\n\n
She stepped inside.<\/p>\n\n\n\n
It was like leaving behind the cold, damp streets of La Candelaria<\/p>\n\n\n\n
and entering the warm eastern plains.<\/p>\n\n\n\n
From the entrance, a giant grill crackled with burning logs.<\/p>\n\n\n\n
That smoky aroma awakened memories of her grandfather\u2019s farm, of Sunday barbecues.<\/p>\n\n\n\n
She knew Argentina was the world champion of meat\u2026<\/p>\n\n\n\n
but something told her Colombia deserved a slice of that title too.<\/p>\n\n\n\n
With all due respect.<\/p>\n\n\n\n
\u201cWelcome,\u201d said the grill master, pointing to a table where she could admire the art of Colombian meat.<\/p>\n\n\n\n
\u201cWhat\u2019s that you\u2019re making?\u201d she asked.<\/p>\n\n\n\n
\u201cMamona,\u201d he replied.<\/p>\n\n\n\n
One of the traditional dishes from the plains, just two hours from Bogot\u00e1.<\/p>\n\n\n\n
The sound of harp music filled the space.<\/p>\n\n\n\n
Mar\u00eda let herself be carried away.<\/p>\n\n\n\n
Her right hand followed the rhythm without thinking,<\/p>\n\n\n\n
as if she\u2019d known it all her life.<\/p>\n\n\n\n
\u201cI\u2019ll have one,\u201d she said.<\/p>\n\n\n\n
And right away, the grill master brought her a heaping plate:<\/p>\n\n\n\n
pork ribs, mamona\u2014crispy and glistening between red and brown\u2014salted potatoes, guacamole,<\/p>\n\n\n\n
and an orange arepa they called boyacense\u2014another region she tasted in a single bite.<\/p>\n\n\n\n
She didn\u2019t think she could eat that much.<\/p>\n\n\n\n
But from the first bite, she couldn\u2019t stop.<\/p>\n\n\n\n
The smell, the flavor, the texture\u2026 everything awakened her appetite.<\/p>\n\n\n\n
That pleasure of eating something magnificent while hungry left her satisfied,<\/p>\n\n\n\n
ready to continue the adventure that was this city.<\/p>\n\n\n\n
Meanwhile, back at the neighborhood supermarket,<\/p>\n\n\n\n
the neighbor looked at the photos Mar\u00eda\u2019s mother showed her.<\/p>\n\n\n\n
\u201cThat meat is making me hungry!\u201d she said.<\/p>\n\n\n\n
